Looking to spice up your burger game this burger is going to become part of your grilling recipe staples. If you like Vietnamese flavours but not the spice, simply limit or eliminate the chili. If you don't have a food processor or blender you can finely chop the ingredients by hand. With the lemongrass you need to take the side of your knife blade and press down on the lemongrass chunks (to release the oils and flavour) before you start to chop it. I prefer to add the ground meat at the end and mix in a bowl by hand because I prefer the texture, however if you want to limit your dishes you can add it to the food processor and pulse very briefly. When it comes to fish sauce, look for ones that do not contain sugar, many do and are of inferior taste and quality. Red Boat fish sauce is my favourite. It contains only 2 ingredeints: wild caught anchovies and sea salt.

 1 lb ground pork, chicken, turkey or grass fed beef
 1 bunch cilantro, leaves and stems
 3 garlic cloves
 1 large red chili pepper
 1 shallot, halved
 1 ½ inch piece of lemongrass, cut into 2 pieces
 1 tbsp coconut sugar
 2 tbsp fish sauce
 1 tbsp arrowroot
 2 cups thinly sliced beet greens or dark greens of your choice
 avocado oil & sea salt to drizzle
 4 Gluten Free hamburger buns
 butter
Satay Sauce

Prepare satay sauce according to recipe and set aside. Pulse cilantro through lemongrass in a food processor or blender until fine. Remove mixture from food processor and add it to medium bowl along with the ground meat and arrowroot and mix by hand until all ingredients are well combined. I find that adding the ground meat and arrowroot by hand makes for a less gummy texture. You can use the food processor but I prefer the texture of hand mixed.

Form into 4 even patties and grill or pan fry until on each side until fully cooked ( internal temp should be 160 F (71 C) for ground pork). Total cook time should be about 10-12 minutes.

Just before your burgers are finished cooking, butter the insides of the buns and grill or toast in oven until golden brown on edges.
Tip: Gluten Free buns can tend to be crumbly and delicate. Buttering them helps them to hold together better and makes them even tastier.

Drizzle a little oil, vinegar and pinch of sea salt over greens and toss gently. To assemble: spoon a little satay sauce on bottom burger bun, then top with the burger, a little more sauce and then the greens followed by the top bun.
