As someone who can not not drink alcohol (ok maybe a sip or two now and again), I am always dreaming up refreshing mock-tails using whatever seasonal fruits I have on hand or access to. This apple citrus mock tail is just that. I had lots of apples on hand that were given to me and they were on the brink of over-ripeness.
In case you are wondering why I add whole citrus peel, instead of just zesting it, it is because the whole peel (white spongey pithy part removed as it is bitter) imparts SOO much flavour (not to mention antioxidants). So, if possible, don’t omit this ingredient, even if it is a little more work. The base mixture can be stored in the fridge for up to 5 days or you could even freeze it to make drinks at a later date.
If you would like to transform this into a cocktail my husband suggests adding 1 shot of unflavoured vodka. Add the vodka and the rest of the ingredients to a shaker and shake vigorously. Pour and enjoy! Garnish with a thin apple slice and rosemary.

Add apple cider, lemon peel, lemon juice, maple syrup and cinnamon to a high powered blender and blend on high speed for 1-2 minutes or until frothy.
For each mock-tail: add desired amount of ice cubes to a glass, half of the drink mixture and finish off with mineral water. Garnish with a thinly sliced apple slice, cinnamon stick and a fresh sprig of rosemary if desired and enjoy!!
