This salsa is the perfect summer salsa and accompaniment to fish. Fresh, light and naturally slightly sweet, It paired beautifully with crab tacos and was a great dip for tortilla chips.

3 cups Seedless Watermelon, finely chopped
1/2 of a sweet yellow pepperHot house grown is the best
1 Serrano pepper, seeded and finely diced
3 tbsp Red onion, finely diced
1 Lime, juiced
2 tbsp Chopped Cilantro
¾ tsp Sea Salt

Place all of the ingredients in a medium glass bowl in the order listed. Gently toss to combine. Serve as a dip for tortilla chips or as a salsa for seafood tacos. Best eaten within 48 hours.
