This bright and super yummy smoothie is also loaded with health benefits. Lemongrass is full of benefits, including: detoxification, battling insomnia, immune system strengthening, enhancing respiratory health, pain reduction and aiding in digestion. I try to have lemongrass on hand in the freezer ready made for smoothies and other recipes. I buy it fresh at my local food co-op. How to prep lemongrass: Slice off the very bottom (tough end) of the stalk and peel off any dried layers. You will typically have about 3 inches of white to light green stalk that is useable. Cut the stalk into 1/2 inch sections and freeze. Since lemongrass stalks are quite woody you will need to make sure you blend it well, otherwise it can be a bit stringy. So if you normally blend your smoothies a certain length of time, double it, to achieve a smooth texture.

 1 ½ cups frozen strawberries or 2 1/2 cups fresh strawberries
 1 ½ cups unsweetened dairy free/plant milk of your choice **reduce if you want a thicker smoothie
 1 -2 limes, zested and juiced
 3 -1/2 inch pieces lemongrass
 1 scoop collagen protein powder or vegan protein powder I use Vital Proteins collagen powder(unflavoured)
 2 -3 tbsp liquid sweetener of your choice (raw honey, grape nectar, maple syrup, or keto maple syrup)I used Domaine Sante grape nectar sweetener

Add all of the ingredients to a high powered blender and blend for 2-3 minutes or until you have a smooth mixture. Pour into 2 glasses and enjoy immediately or place in fridge for up to 24 hours.
