When most people think of rhubarb they think of overly sweet desserts where you taste sugar instead of rhubarb. Rhubarb is a wonderful ingredient that has SOOO many possibilities. Make sure you source fresh rhubarb with healthy crisp and juicy stalks. If when you cut the rhubarb you notice that the inside has little holes in it, this is an indicator that it is dry and past it‘s prime. It will NOT taste good if it is like this, and unfortunately you need to compost/ toss it. Rhubarb should be crispy and juicy and should produce a LOT of juice. Thankfully you can freeze any extra rhubarb juice for up to 5 months. Not only that, but you don‘t need a juicer, just a blender and a nut milk bag or cheesecloth.
You can use whatever sparkling water beverage in this. I love the subtle strawberry hibiscus notes that the Nixie brand Sprawberry Hibiscus sparkling water brings. You could even use plain sparkling or mineral water.
Why use the peel of the lime? The flavour as well as the majority of the antioxidants found in citrus is in the peel. Simply use a sharp knife to peel sections of the peel and then remove the white spongey part of the peel as it is very bitter. Simply zesting the peel doesn’t result in the same citrus flavour when it comes to beverages.

Add all of the ingredients (except for the sparkling water) to a high powered blender and blend for at least 1-2 minutes or until frothy.
Fill individual glasses with extra ice then fill half way with the rhubarb lime mixture, then finish off with the sparkling water. Alternatively if you are making a big batch at once you can add the sparkling water to the blender with the other ingredient and pour that over ice into individual servings, serve and enjoy! Top with fresh mint or bee balm leaves (bee balm is edible)
