With all the Barbie movie craze, I knew that when I received some Pink Pitaya superfood powder in the mail from Ellie’s Best as a gift, I had to create a simple healthy pink recipe. I had Barbies as a kid, however I wasn’t Barbie obsessed like many girls I knew. I was more of a Tom-girl who enjoyed playing with lego and playing in the woods. That being said, I feel it is important to embrace the lighthearted things in life from time to time. And as a former pre-school teacher I love making things to make kids happy!! Pink isn’t my favourite colour in general (it is green in fact) but when it comes to flowers pink is my favourite colour.
This is a simple smoothie that makes for a healthy snack or is great as a morning smoothie. It is full of antioxidants, anti inflammatory ingredients, protein and probiotics.
What is Pink Pitaya powder you may ask? Pink Pitaya is red dragon fruit. It is a powerful immune system builder, full of antioxidants, and it has been shown to improve metabolism and aid in digestion. I don’t usually incorporate tropical fruit that isn’t native to the Pacific Northwest, however occasionally I make exceptions, as in the case of this!!
Since nectarines are in season and I had some on hand, they became the fruit base for this smoothie. I am allergic to peaches but thankfully not nectarines. In order to get the brightest pink colour to this smoothie it requires a light fleshed fruit, in this case white fleshed nectarines, however peaches or regular nectarines should work as well.

 2 nectarines (I used white fleshed nectarines) or peaches, stones removed and chopped into large chunks
 ½ cup unsweetened dairy free yogurt ( I used Yoggu)
 ½ cup unsweetened plant milk of your choice
 1 inch piece of peeled fresh ginger root
 raw honey to taste (about 1 tsp)*optional
 1 scoop collagen powder (vegan or non vegan source)

Add all of the ingredients to a high powered blender and blend on high speed for 1-2 minutes or until you have a smooth frothy mixture. Pour into 2 glasses and enjoy!
