One of the favourite flavour combinations of many, myself included is lemon and blueberries. These deep blue bites will satisfy that craving, taking less than 10 minutes to make. They make the perfect healthy snack. Blueberries are packed with antioxidants and fibre. Lemon, especially the lemon zest is packed with flavonoids (an antioxidant) and vitamin C. These little bites will give you a little boost. I used locally grown Bow Hill Heirloom Blueberry Powder. Each tablespoon of the powder contains a whopping 86 blueberry skins per tablespoon. These can made with any nut meal, such as hazelnut, walnut, almond or sunflower or pumpkin seed meal. To make your own nut or seed meal pulse raw unsalted nuts or seeds in a food processor until you achieve a coarse meal. If you don't own a food processor you can buy pre-made nut or seed meals. There is no oil in these so the only fat is naturally occurring fats from the nuts/seeds and the coconut.

If you are making your own nut/seed meal pulse in a food processor briefly until you achieve a coarse meal. Be careful not to over-pulse or you will have nut butter! Pour nut/seed meal into a medium bowl and add the rest of the ingredients and stir well until thoroughly combined.
Squeeze the dough as you roll into balls. If the bites are not sticking together add a wee bit more lemon juice. Place balls on a wax paper lined plate and place in the fridge to firm up. Once firm store them in an airtight container for up to a week.
