We are kale lovers in our house, particularly Dinosaur(Lacinato) kale and I grow it every year in my garden. This is a wonderful way to enjoy the bounty of kale, such a wonderful readily available green.

1 Medium bunch of Lacinato (dinosaur) Kale, washed and de-stemmed
2 2 lemons, juiced
4 -5 cloves peeled garlic
⅔ cup raw walnuts, pistachios, or pumpkin seeds
⅔ cup extra virgin olive oil
1 ½ tsp sea salt

Tear stemmed Kale into smaller pieces. Whir in a food processor or blender until smooth. Of course it is great with pasta but it also can be enjoyed as a spread, dip and a topping sauce for mild flavored proteins.
