I first made a version of these while camping near the Pacific ocean in July of 2021. I enlisted the help of my 11 year old friend to make them over our camp stove. Typically these would be made into a square but since that is not practical to bring camping, I decided to make these into balls. Since heat tends to be higher over a propane stove make sure you stir constantly while melting the marshmallows and oil.

Take a handful of graham crackers (if using Kinnikinnick "S'moreables" graham style crackers you will use half of a box) and place them inside a large plastic bag, seal and bash them into smaller pieces with a rolling pin. I used a "Stasher" silicone re-useable" bag for this.
Melt coconut oil, marshmallows and vanilla in a medium pot over low heat and stir until melted. I find vegan marshmallows a bit tricky to melt without a little help. Using a wooden spoon and pressing down on the marshmallows while stirring really helps.
Once melted, remove from heat and stir or use your hands to incorporate the cereal and graham cracker bits. Grease your palms with a little extra coconut oil and squish the mixture a bit then form into balls. Place balls on wax or parchment paper. Melt chocolate with 1/2 tbsp oil over very low heat. Drizzle balls with melted chocolate and place in the fridge to firm up.
*You can also press the marshmallow mixture into squares into a parchment lined 8 x 8 pan and then drizzled with chocolate.
