Watermelon salad is a summertime favourite and it's difficult to believe I had never made one until now. We love watermelon and there's nothing like it to beat the summer heat. Since watermelon is made of 92 % water it truly is the perfect hydration food. Typically watermelon salads have feta cheese in them. My husband is not a fan of feta so I decided to create a simple salad that didn't contain feta. If you wish to add feta, I suggest Violife just like feta vegan cheese or use a true Greek or Bulgarian feta (made with sheep's and/or goat's milk). Dress the salad with the simple dressing just before serving and gently toss. This salad is best made the day of and eaten that same day. The watermelon is just too full of liquid to make it long in advance.

Place watermelon and cucumber in a large bowl and toss gently. Add basil and mint or tarragon. Mix olive oil, lime juice and sea salt in a small jar and shake well then pour vinaigrette over salad mixture just before serving. Enjoy fresh.
