Watermelon, Lime and Ginger Refresher

There's nothing more satisfying than picking out the perfect summer watermelon and enjoying it on a hot day. I learned how to pick the perfect watermelon from my husband who learned from his grandpa Joaquin. It should feel heavy and have a yellow spot from where it was ripening on the ground. Hold it up to your ear and thump it with the side of your thumb on the yellow spot and it should sound hollow. There's nothing that cools me down in summer like watermelon. I remember my Traditional Chinese Medicine doctor and acupuncturist telling me once how all melons are considered cooling foods in Chinese medicine and I really feel how watermelon does that for my body. This drink is not only refreshing, but very healthy it's also sugar free.

 4 cups cubed seedless watermelon
 1 1/2 inch (2.5 cm) piece of ginger root peeled and cut in half
 1 cup Lemon flavoured sparkling water (naturally sugar free) or plain sparking water
 1 lime, zested
 2 limes, juiced
 1 pinch Celtic Sea salt (gray)

Place all of the ingredients in a high powered blender and blend for at least 2 minutes or until smooth. It will be very frothy, just scoop out the froth and top each beverage with it and enjoy!
