Nothing comes close to the flavour of local or garden grown fresh strawberries. The only downside is that they spoil very quickly so time is of the essence. I really waned to capture the flavour and freshness of the strawberries and I love incorporating lemongrass into smoothies so I knew it would taste great with the strawberries. Super refreshing for the hottest of summer days. Even if it's not hot(like here in the Pacific Northwest where we seemed to have skipped a proper spring and moved into July where it feels more like late March), these are such a sweet treat. If you sweeten these with grape nectar they are a low glycemic treat. Since strawberries are low in carbs and high in fiber the popsicles can be made fully Keto friendly by substituting liquid keto sweetener for the grape nectar. Adjust whatever sweetener you decide you use to taste. If you are using maple syrup you will need to use less than what is called for of the grape nectar. The preparation time indicated does not include the time required for these to freeze.

 2 ½ cups Whole Fresh Strawberries
  cup Freshly Squeezed Lemon juice
 two 1/2 inch size pieces of fresh lemongrass

Place all of the ingredients in a high powered blender and blend for at least 2 minutes or until very smooth. Pour into 6 popsicle molds. Place on an even surface in the freezer until they are frozen solid. Depending on your freezer this may take up to 6 hours or so.
