This easy to make sauce comes together in your blender and makes noodles, vegetables and rice or whatever you want to top it with, sing. It is ready in less than 10 minutes and will last in the refrigerator for up to 5 days.
heaping 1/2 cup smooth natural (salted) peanut butter
¼cupvegetable broth or stock
1 ½tbspcoconut sugar
1two (2) inch piece peeled fresh ginger root, cut into 4 smaller chunks
2garlic cloves, cut in half
2tspthai red curry paste
1medium shallot, quartered
Place all of the ingredients in the order listed in a blender and power on high for 2-4 minutes or until smooth and silky.
