We are huge pasta lovers in our house. It's such an easy dinner and often takes around 30 minutes or less to make. With all the whole grain/high protein gluten and grain free pastas it makes for a wholesome meal. Pasta does not have to be the starchy noodle dishes of our childhoods.You can make this with pancetta, Italian sausage or uncured bacon. To finish you can add a few handfuls of freshly chopped basil, oregano or thyme. This can made with whatever pasta you prefer, such as spaghetti or penne or your favourite pasta.

Add olive oil to your skillet and turn heat to medium and add the bacon pieces and sauté until bacon is crispy and golden, about 5 minutes. Fill a pot with water for the noodles. Add red and black pepper and shallot/onion and sauté for about 8 minutes. Add the garlic and cook for another 2 minutes. Add the tomatoes.
Crush the tomatoes using your hands by squishing them through your fingers. Turn up the heat to medium high to bring the sauce to a gentle boil. As soon as it does turn down the heat to medium low and simmer about 15 minutes. Add sea salt to taste. Add the cooked pasta and fresh herbs and serve and enjoy!
