I love lemon poppyseed flavored anything and this protein packed pudding makes a great filling breakfast. Top with fresh fruit and granola at it’s a delicious way to start your day. Chia pudding is one of my go-to breakfasts. You can customize with so many ingredients and as for sweetener, you can use stevia if you like, or another liquid sweetener. The active prep time for this is only 10 minutes. It does not include the time required to allow it to set up overnight.

Shake the coconut milk can well then stir the canned coconut milk well to incorporate the coconut water and coconut cream and measure into a medium bowl with a lid. Add the rest of the ingredients and whisk until smooth. Make sure you stir any clumps of chia seeds that may have formed.
Cover and allow to set overnight or for at least 8 hours. Top with fresh fruit, granola or whatever you desire.
*If you are using almond milk reduce milk to 1/2-3/4 cup.
