I've always had a great fondness of custards and puddings however I was looking for a way to create a recipe that didn't rely on eggs or dairy. It's June and I had just gotten some beautiful local strawberries and I couldn't think of anything better to pair them with than this custard. This makes the perfect last minute quick dessert. It takes less than 30 minutes to come together and all you need to do is to pair it with fresh berries or fruit and there you go! It's so luscious and creamy and the bright lemon really shines through in this.

 2 cups unsweetened dairy free milk of your choice
 2 cups canned coconut milk(Full Fat)
 3 tsp vanilla extract
  cup maple syrup
 ½ cup tapioca starch
 2 large lemons, zested
 fresh berries or fruit for topping

Pour the milk and the coconut milk into a medium saucepan and whisk. Remove about 1/2 cup of the milk and add it to a medium bowl. Whisk the tapioca starch into the 1/2 cup of milk and whisk until smooth. Pour the mixture back into the saucepan.

Add the rest of the ingredients to the saucepan. Whisk over medium heat and whisk until it just starts to bubble then lower the heat and continue to whisk until it thickens. It should take about 20 minutes to thicken. A way to know if your custard is ready is when you can draw a clean line through the back of a spoon using your finger.

Pour custard into 4-6 serving containers(depending on how large you want your servings). Cover to prevent a skin from forming and allow to firm up in the refrigerator for at least an hour or so.

Enjoy topped with fresh fruit of your choice. It tastes particularly good with fresh berries.
