This quick slaw came together after coming home from 2 weeks away to a garden full of early fall Purple Kohlrabi. Everything in it I had in my garden, from the dill to the green onions. It was very gratifying to know that I had all the ingredients on hand to make a healthy simple salad. This is one of the things I love about growing my own food, in that many times with a little creativity, all that I need for great seasonal food is right at my fingertips. This is perfect as a side dish, light and refreshing. It would pair well with heavier/spicy foods. If you are still uncertain about kohlrabi having never eaten it you can subsitute 1/2 of the kohlrabi called for with grated carrots.
Mix all of the dressing Ingredients in a small bowl, using a whisk.
Place the slaw ingredients in a medium bowl. Pour dressing over slaw and serve.
