As someone who can’t drink coffee due to the effects of caffeine on my body, I was so excited to discover Matcha green tea. If you are new to matcha you may be wondering how it is different from other green tea. The finest matcha hails from Japan. The bushes that the tea grows on are covered and shielded from light a few days before harvesting. This retains the vibrant (chlorophyll rich) green colour of the leaves which are then air dried and then milled into a fine powder. That powder can then be used to make all sorts of matcha beverages. I have tired many brands of matcha green tea over the years and some have still given me a bit of the caffeine jitters. My hands down favourite is made by Vancouver based Soar Organics (not sponsored) One of the reasons their matcha so exceptional comes down to where it is grown and sourced. It is grown and sourced from the premier matcha growing regions of Japan (the regions of Uji, Kyoto and Kagoshima)To quote their FAQ section “ the caffeine found in matcha has a much slower release than a caffeine spike you might get from a typical cup of coffee. The caffeine in matcha forms bonds with its numerous nutrients, including the amino acid L-Theanine, to promote a clean, steady and calming boost of energy!” This is why I do well with their matcha. I have included my full recipe for strawberry milk in this recipe, however this recipe I have shown how to make this with my Nutr machine. For the strawberry milk, seasonal/local and organic strawberries will result in the sweetest strawberry flavour. You will need less added sweetener depending on the freshness of your strawberries. Frozen organic strawberries work well if you are making a large batch of the milk as they are tricky to slice if you are making a small batch in your Nutr. If you thaw the frozen berries however they will work well in your Nutr.

 2 tbsp raw unsalted pumpkin seeds or other nut/seed of your choice
 1 -2 tbsp maple syrup, raw honey, grape nectar sweetener or liquid sweetener of your choice
 ½ tsp vanilla extract
 1 pinch sea salt
 filtered water to Nutr machine fill line
Matcha green tea
 ¼ cup very hot water (just before boiling) Boiling water will burn/damage the delicate matcha leaves
 Ice
Large Batch Strawberry Milk

Add all of the ingredients to your Nutr machine and press the “room temp” setting. Run the setting twice to produce a smoother milk. Strain (if desired) over a medium jar ( I use a mason jar). For two large drinks I suggest making two batches of the strawberry milk in your Nutr machine.

Sift matcha powder over a small bowl, pour hot water into the bowl and whisk ( I use a traditional bamboo chasen whisk but you an use a regular small whisk) and whisk until matcha is nice and frothy. Add strawberry milk to two separate glasses, then add ice and then the matcha tea. Stir and enjoy!
