One of the best combinations is peaches and blueberries and it used to be one of my favourite pies to make before I discovered I was allergic to peaches. Nectarines, being very similar to peaches are equally wonderful when paired with blueberries. I created this smoothie during our unprecedented Pacific Northwest heat dome this summer (June 2021). All I wanted to eat for every meal were hydrating, nourishing foods. The coconut water in this smoothie adds to hydration and the flavour. You will love this smoothie for breakfast, snack or during a heat wave, as a meal.

 3 nectarines, pits removed and chopped into large chunks
 1 cup fresh or frozen blueberries
 1 ½ inches fresh, peeled ginger root
 1 scoop MCT oil or collagen powder
 2 -3 dates, softened in hot water for 5 minutes
 1 cup coconut water

Place all of the ingredients in a high powered blender and blend until smooth, about 2 minutes. Pour into 2 cups and enjoy or cover and place in the refrigerator for the next day.
