My husband is of Mexican heritage and would you believe it, he does not like guacamole! He says it’s a texture thing. I make my guacamole with chunked avocado and it turns out my husband actually likes it! I've tried many versions of guacamole over the years and I've come to the conclusion that I like my guacamole very low key and basic, and chunky. I feel that keeping it simple and uncomplicated allows the avocado to shine.

 2 large avocados
 juice of 1 large lime
 1 -2 garlic cloves, grated on a microplane grater or pressed/finely minced
 1 large pinch red chilli flakes
 ¼ -1/2 tsp sea salt

Cut the avocados in half and remove the stones then carefully score each half with a paring knife. Gently remove the pieces of avocado and place in a medium bowl. Add the rest of the ingredients and mix gently. Enjoy immediately or place in a covered glass container in the fridge for up to 24 hours.
