You'd never know by the colour of this smoothie that it is packed with green goodness, from fresh spinach to matcha to kale powder. It tastes so yummy you'll even full your non veg loving family members! You can use any green powder in this in place of the kale powder and if you can't find fresh lemongrass, substitute fresh ginger root. The recipe makes 2 generous smoothies so you can put one in the refrigerator for the next day. Use whatever liquid sweetener you like in this from raw honey to stevia to maple syrup. I chose grape nectar as it is also low glycemic.

 2 large handfuls fresh spinach
 1 inch piece lemongrass, cut in 2-3 pieces
 ½ large lime or 1 small lime, juiced
 1 cup unsweetened non dairy milk
 1 cup frozen blueberries
 ½ tsp green matcha powder
 1 tbsp hemp hearts
 ½ tsp kale powder or other green powder of your choice
 2 scoops plain collagen powder or vegan collagen powder
 1 -2 tbsp grape nectar or liquid sweetener of your choice

Add all of the ingredients to a high powered blender and blend for at least 2 minutes or until smooth. Divide into 2 portions. Enjoy right away or place one serving in the fridge so it is ready for the next morning.
