A Scrub is a zingy drink made with fruit, cider vinegar and sparkling water or cocktails. This recipe is based on a recipe found in Real Simple Magazine. I adapted the recipe and made my recipe with organic grapefruit(instead of pink grapefruit) as it was far more affordable than pink grapefruit and I could find organic. If you are not a grapefruit fan, you could use organic blood oranges or navel oranges. Instead of making it with white sugar, I chose to use Monkfruit/Erythritol sweetener. I paired it with Pelligrino Sparkling water and also tried it with Spindrift Grapefruit Sparkling Water. This makes a lovely drink for your next Sunday Brunch. It is a more adult drink as it has a bit of sour kick to it but there will be some kids who will enjoy it. Probably the same kids like me(I was a kid who loved olives, anchovies, sardines and the like) The Prep time on this doesn't include the overnight soaking of the fruit in the sugar or the two day meld of the fruit and cider mix. The actual making of the drink, from chopping and zesting to straining of the juice mixture through a nut milk bag or cheesecloth will only take about 30 minutes in terms of actual labour.

Grate the zest from the Grapefruits with a Microplane grater/zester. It should equal about 2 1/2 tbsp. Place in a large glass bowl. Remove the rest of the Grapefruit peel and discard. Chop the flesh into I-inch pieces(should equal about 2 cups)
Add Monkfruit Sweetener to the zest and rub with your fingerprints to release the natural oils. Stir in the chopped grapefruit and the sliced ginger. Cover bowl with airtight lid and place on the counter to sit at room temperature overnight.
Stir vinegar into the grapefruit mixture. Cover again and refrigerator for 2 days. Mix we'll with your hands. Strain mixture through a nut milk bag or cheesecloth. Stain over a large wide glass jar or bowl. Once you have strained out all the juice, place the shrub in a tall glass jar. Make sure it has a tight lid on it.
For each serving pour 3 tablespoons(45ml) of the scrub in the bottom of a tall glass. Add ice, then add Sparkling water of your choice and fill up to the top of your glass. Slice another Grapefruit thinly to garnish each serving.
This Shrub will store well in the refrigerator for up to a month or so.
