Fresh Tomato & Herb Salad (Paleo Whole30 Vegan)

Later summer and early autumn is the time when heirloom, garden and cherry tomatoes are at their sweetest peak. This is the time to make this fresh simple and flavourful salad. The sweet tomatoes will burst in your mouth as you enjoy this salad. You can use cherry, grape or small heirloom/ garden grown tomatoes. This salad is best eaten shortly after preparing or at least the day of. If you want to add a little protein feel free to add some vegan or Greek sheep's feta or mozzarella to individual portions of the salad before eating. Active prep time for this salad is just over 5 minutes, however the tomatoes and onion need to marinate in vinaigrette for about 20 minutes so prep time includes that.

 1 ½ lbs fresh cherry/grape/small heirloom tomatoes(about 4 cups)
 ½ small red onion, thinly sliced
 1 handful chopped fresh herbsI use basil, thyme leaves, dill and parley
 3 tbsp extra virgin olive oil
 1 ½ tbsp red wine vinegar
 ¼ tsp sea salt

Prepare vinaigrette an a small bowl by whisking ingredients together; set aside. Combine tomatoes and sliced onion in a medium bowl and pour vinaigrette over them. Allow them to marinate for at least 20 minutes.


Add chopped herbs to marinated salad and toss gently to combine. Serve as is or with vegan/greek feta cheese or mozzarella.
