When vegetables are fresh and local there's very little you need to do to them to create a delicious entreé. This 3 ingredient simple salad is no exception. Crunchy and satisfying whether it's a lunch salad or a side salad for dinner. For those of you who are not radish fans, you can substitute chopped jicama or kohlrabi.

 2 cups long yellow wax beans or other long bean of your choice, cut in half
 1 cup sliced radishes (or substitute cherry or grape tomatoes)
 2 tbsp finely sliced fresh basil or tarragon
Lime Ginger Dressing
 3 tbsp extra virgin olive oil
 3 tbsp freshly squeezed lime, lemon or grapefruit juice
 ½ tsp peeled grated ginger root I use a microplane to get a fine grate
 ¼ tsp fine sea salt
 ½ -1 tsp raw honey
 hemp seeds to sprinkle

Prepare a bowl or sink full of fresh water and ice as an ice bath. Remove stem end of beans and place them in boiling salted water for exactly 1 minute, drain and place in ice-bath to cool down and to stop cooking. Once beans are cool, slice them in half.

Place all of vinaigrette ingredients in a small glass jar and shake vigorously. Add cooled beans, radishes and basil to a medium bowl. Pour vinaigrette over salad and toss gently and serve topped with hemp seeds.
