These are one of my absolute favourite cookies. They will melt in your mouth and they are sooo simple to make with very minimal ingredients. They are dense and rich and taste even better the next day. Trust me, they'll become a family favourite!

Conversion Chart

 1 Heaping Cup Sesame Tahini
 ¾ cup Coconut Sugar
 1 Large egg, beaten (or sub chia egg)
 ½ tsp Baking soda
 ¼ tsp Sea salt
 ½ tsp Vanilla extract
  cup Dark Chocolate Chips such as Enjoy Life Brand

Preheat oven to 350 degrees F. Place all of the ingredients, except the chocolate chips in a medium bowl and mix with an electric mixer on medium high until the dough forms into a ball(about 3 minutes or so)

Add the chocolate chips on low speed and beat until they are evenly distributed throughout the dough. The Dough will be somewhat crumbly but mold it with your hands into good sized balls. If you are still having some trouble getting them to stay together, add some coconut oil to your hands and squeeze the dough together into balls.

Place balls onto a parchment lined baking sheet and gently flatten the balls with the palm of your hand. Place the cookies in the oven for 14-16 minutes, rotating the baking tray half way through cooking time so that cookies get evenly browned.

Leave the cookies on the sheet at least 20 minutes to cool as they will be very fragile. Carefully move them to a wire cooking rack. This recipe will make about 14 medium large cookies.
