These are inspired by the flavours of creamy white chocolate peppermint candies that I absolutely loved growing up. Since moving to the States from my native Canada I have yet to find anything with those same flavours so I came up with these gems. These healthier treats definitely satisfy that craving for something sweet, without having to turn on your oven.

Typically I find that coconut butter that is available is not smooth and creamy right out of the jar like nut or seed butters so it needs to be softened. I find the best method is using a food processor. Pulse coconut butter until smooth about 15 seconds or so. Add pecans and pulse until they are broken down a little.
Add the rest of the ingredients (except the chocolate chips) and pulse until it comes together to form a ball. Add the chocolate chips and pulse a few times. Remove dough from the food processor and place in a medium bowl.
