Double Beetroot and Blueberry Smoothie

Yields3 ServingsPrep Time15 minsCook Time2 minsTotal Time17 mins

I've always been a beet freak, even as a little girl, I loved beets. Beets are very good for our bodies, as they are full of fibre, vitamin C, folate and nitrates which are important for heart health, energy and athletic performance. This is a way of getting the goodness of beets into a smoothie. You'll even be able to get non beet lovers, of which my husband is one, to enjoy this smoothie. This recipe makes 2-3 servings. I always make extra and put it into a mason jar in the refrigerator for the next day. It makes a perfect grab n go breakfast. You can make this with peeled and grated beetroot or just peel and chop one medium beet. I am not a fan of protein powders and personally think they are mostly unnecessary. I prefer using whole sources of protein such as hemp hearts or chia seeds in my smoothies.

¾ cup Dairy Free Milk of your choice
½ cup Unsweetened Plain Dairy Free Yogurt I prefere homemade cashew milk yogurt or Forager Project Plain unsweetened
 2 tsp Red Beet Powder
½ cup Grated Beetroot or 1 medium Beet peeled and chopped into big chunks
4 Dates, soaked in hot water for 5-10 minutes
1 ¼ cups Fresh or Frozen Organic Blueberries
1 Knob Fresh Ginger, peeled and chopped into 2 pieces
 2 tbsp Hemp Seeds/Hearts

Pit the dates and then place all of the ingredients in a high powered blender and whir for at least 2 minutes or until you have a smooth mixture, free of any lumps. Store extra smoothie in glass jars with a lid in the refrigerator for the next day.
