I had never tasted Sweet Potato Pie until I was in my 20's and from then on I've been hooked.

1 ¼ cups Puréed sweet potato(about 3 medium potatoes)
¾ cup Non dairy milk
¾ cup Coconut Sugar
2 tsp Vanilla extract
1 tbsp Maple Syrup
3 Eggs or Vegan egg replacer
1 tsp Ground cinnamon
½ tsp Nutmeg
¼ tsp Ground Cloves
1 pinch Ground Ginger
1 pinch sea salt

Preheat oven to 350 degrees Fahrenheit.

Whir ingredients in a food processor or beat with an electric beater until smooth.

Pour into a greased springform pan and wrap outside of pan with tin foil to prevent the filling leaking and bake for 25-35 minutes until it still has a slight jiggle but its still firm.
