Creamy Blueberry Smoothie Bowl

Yields1 ServingPrep Time5 minsTotal Time5 mins

I love to start my day with a smoothie. It helps me function so much better throughout the day and makes a tremendous difference when it comes to my gut health. Smoothie bowls are a great way to get even more nourishment and for many, they make a better stand alone breakfast than just smoothies alone. Another benefit is that they are so customizable as well. Just add whatever toppings you like such as more fresh fruit, seeds, granola, nut/seed butters and cereal and even chocolate chips or cacao nibs. The possibilities are endless.

1 ½ cups fresh or frozen blueberries
 ¾ cup non dairy yogurt
 1 large lime, juiced
 2 scoops unflavoured collagen powder
1 large handful frozen broccoli or cauliflower florets
3 -1/2 inch pieces fresh lemongrass
½ to 1 tbsp date syrup or sweetener of your choice
 ½ tbsp maple syrup
 hemp hearts
 fresh berries or fruit
 granola or muesli
cashew or other seed or nut butter
 unsweetened coconut flakes
dark chocolate chips or cacao nibs

Place all of the ingredients in a high powered blender and process on high for at least 2 minutes or until smooth. Pour into a bowl. Top with whatever toppings you like.
