Cranberry Orange Ginger Smoothie

Yields2 ServingsPrep Time6 minsCook Time2 minsTotal Time8 mins

This healthy cranberry smoothie is loaded with vitamin C, antioxidants, especially quercetin, and bacteria fighting compounds. Cranberries are rarely eaten raw as they are very tart however the natural sweetness of the orange and the dates make for a delicious smoothie. Beet powder is very high in nitrates which have been shown to increase blood flow, energy and lower blood pressure. I recommend using Medjooll dates if possible in this as they have the most natural sweetness. If you are using Deglet noor dates just add an extra date or too as they are smaller and not usually as sweet.

1 cup Unsweetened Coconut Milk Yogurt(or yogurt of your choice)
½ cup Unsweetened Macadamia nut milk(or non dairy milk of your choice)
 1 Orange(or 2 small oranges)
1 Knob of ginger, peeled and cut in half
1 cup Fresh or Frozen Whole Cranberries
 1 tsp Red Beet(root) Powder
4 Medjool Dates, soaked in hot water for 5 minutes or so

Place all of the ingredients in a high powered blender and blend for about 2 minutes or until smooth. This makes 2 servings so you can place one serving in the refrigerator for the next day.
