If you love key lime pie or anything citrus you are going to fall in love with this chia pudding. Top with fruit and can be a satisfying breakfast without being overly sweet or top with layers of crushed graham crackers and it makes a sweet treat or dessert. I recommend investing in a microplane grater(less than 20 dollars) in order to zest your citrus. The citrus flavour is in the zest not the fruit. Just make sure not to zest the white part of the skin as it is bitter. The prep time does not include the overnight or all day soaking of the chia seeds. If you plan to enjoy this for breakfast prepare before bed. If you want to enjoy this for dessert prepare the morning of. Substitute your favorite keto liquid sweetener to make this even lower carb and KETO friendly

 ½ cup chia seeds
 2 limes, zested
 2 tbsp lime juice(2-3 limes)
 ¼ tsp sea salt
 ¾ cup unsweetened non dairy milk*if you are using almond milk reduce to 1/2 cup
 ½ cup coconut milk(from can/tin)
 2 tbsp date syrup or liquid keto sweetener
 2 tbsp maple syrup or liquid keto sweetener

Place all of the ingredients in a medium bowl and whisk until smooth. Cover with a lid and place in the refrigerator overnight or for at least 8 hours. Spoon into 3 individual small bowls/ glasses and top with desired amount of graham cracker crumbs and fruit.
