French toast is one of my favourite weekend breakfast and brunch treats. My husband however has had an egg allergy since early childhood so french toast has always been off limits. I too have a mild egg allergy so I really wanted to find a way to enjoy french toast again, without eggs. This past year thanks to Christina of the blog Buenqamino, I discovered Just Egg egg liquid egg replacer. It is the closest thing to eggs that I have ever tasted. It is simply magnificent! Currently can only find it in the U.S and Canada. It is kept in the refrigerated section of the grocery store, often in the same section as eggs. It is important with french toast to only flip it once the bread starts to release from the pan. Add a little more coconut oil if needed. If you try to flip it too soon you the bread will tear so just be patient.

Grease cast iron griddle/pan with oil and turn heat to medium. Sprinkle cinnamon over fruit and once pan has heated up place fruit flat side down and cook for about 5 minutes or so or until softened. If you wish you can also grill the nectarines on grill/BBQ. Set aside fruit and clean griddle/pan.
Grease pan/griddle with a little more coconut oil. Heat pan over medium heat. Whisk Just Egg with cardamon, vanilla, milk and salt in a medium bowl. Dip slices of bread in egg mixture, turning to coat both sides evenly.
Cook bread slices in pan for about 4 minutes on one side or until bread is browned and begins to release from the pan; flip and cook for another 3 minutes or until browned. Top with fruit and maple syrup or dairy free whipped cream.
