When I made this for the first time recently I really couldn't understand why I had never made them before as they were so delicious. My husband who has never been a granola lover who almost never eats yogurt, gobbled it up. If you make this in a mason jar they make the perfect grab and go breakfast that everyone will enjoy. I used a plain, very creamy dairy free yogurt. Try to use the creamiest yogurt you can find as it will really make a difference in making these taste like parfaits. You can use whatever granola you prefer. I used homemade grain free granola in mine. If you chose to make the rhubarb strawberry chia jam the prep time will be about 60 minutes. If you chose to make a strictly berry chia jam it will take only about a half hour to make the jam.
Layer the parfait in this order: 1/3 cup or so of the granola, then spoon about 1/2 cup of yogurt on top of the granola. Finish with the layer of chia jam.
Place the rhubarb and half of the lime juice(2 1/2 tbsp) in a medium pot. Turn the heat to medium and cook for about 20 minutes, stirring regularly. Add the strawberries and continue to stir occasionally until the rhubarb has softened but is not mushy.
Remove from the heat and stir in the rest of the lime juice, the maple syrup and then the chia seeds. Allow to cool. Once cool spoon the jam into jars. Then spoon the jam as the final layer in your parfaits.
