When it comes to salads I like to keep them simple. It doesn't get much simpler than this-one ingredient. I am not a fan of lettuce, namely because I feel lettuce lacks interesting taste and texture and gets soggy so quickly. I love making salads from all kinds of greens and other ingredients, making the main ingredient the inspiration. Bok or Pak Choi is such a great vegetable in my opinion, both for it's health benefits but also becasue there are 2 distinct flavours and textures in bok choi. Look for the freshest bok choi or baby bok choi you can find. I am fortunate in that a local farm here on the island where I live just started harvesting it so it was crazy fresh. My husband who is also not a lettuce fan, really loved this salad also. Trust me, give it a try, you won't regret it. It makes a great lunch salad or side salad.

Place the sliced bok choi in a medium bowl and set aside while you make the vinaigrette. Place all of the vinaigrette ingredients in a glass jar and whisk to break up the honey. Allow flavours to infuse for at least 10 minutes then shake before pouring over the bok choi. Top with sesame seeds (if desired) and enjoy!
