Blueberries are one of my favourite fruits. I eat them year round (fresh in season and frozen the rest of the year). We are fortunate here to have an organic blueberry farm near us. When it comes to blueberries try to source local in season, wild and organic, if possible. One of my favourite blueberry memories comes from picking wild blueberries in northern Sweden where I spent a lot of time when I was younger. The family I lived with were very dedicated wild foragers and the dad, Erik, who was like my second dad, often took me wild blueberry picking and it was evident to his wife Alva (who was less than impressed) how many berries missed the rake but not our mouths by our blue tongues and lips. Those memories are some of my fondest. My sister makes some of the best blueberry mini pies (tarts) and I tried to capture those flavours in this. I found the best lemon flavour comes from using the whole lemon rind. Simply shave off chunks of the yellow part of the peel, removing as much of the pith (white part) as possible as it is bitter. The majority of the antioxidants (flavonoids) are in fact found in the peel. If that is too much work for you simply zest half of the lemon with a citrus (Microplane grater is the best) zester instead. As for blueberry powder, if you are able to find some near you or on the internet, it is worth the price. One small bag lasts a long time and the amount of health benefits is staggering. Did you know that blueberries have been shown to significantly improve cognition and memory, so this smoothie with the added blueberry powder benefits may just make you smarter!

 1 ¼ cups frozen blueberries you can use fresh however texture of smoothie will be much thinner
 ½ cup unsweetened non dairy yogurtI use Lavva brand original
 ½ -1 tbsp blueberry powderor add a few extra tbsp of blueberries
 2 two inch pieces of lemon rind (remove as much of the white pith as possible)
 juice of 1/2 large lemonabout 2 tbsp
 ½ cup unsweetened non dairy milk
 1 -2 tbsp liquid sweetener of your choice I use Domaine Santé grape nectar

Add all of the ingredients to a blender and blend on high speed for about 2 minutes or until smooth. Pour into 2 glasses and serve or save in a glass jar for the next morning.
