There's just something special about the combination of limes and blueberries. The flavours just really go together. With the addition of lemongrass, this smoothie is so bright and refreshing. Lemongrass is such a beneficial plant as well, very helpful against anxiety and bloating and it's even shown to be good for oral health. You can use any kind of non dairy yogurt or kefir style yogurt in this. if you find it oo thick just thin it with a little non dairy milk. This makes enough for 2 large servings so you can put one in the fridge for the next day. Since I do not live in a big city and cannot find fresh lemongrass everywhere, I stock up. Then I chop up the lemongrass (white part of stalk) into 1/2 inch chunks (1.5 cm) pieces and freeze them. That way I can just pop them out as I need them for cooking or smoothies.

Place all of the ingredients in a high speed blender and whir for about 2 minutes or until smooth. You can place the extra portion in a glass jar with a lid in the refrigerator and it will be ready for the next days breakfast.
