Apricot Walnut Balls

Buying energy balls can be a challenge when you're allergic to many of the ingredients found in most store bought varieties, especially almonds. For a fraction of the price and full of nourishing ingredients, you can make your own. These come together in no time in your food processor and they are prefect to take along on road trips, camping or an afternoon hike. They are also kid approved! Strangely enough I've never been a fan of dried apricots until I tried Wild and Raw brand's Sun-Dried Turkish Apricots. If you too are not a dried apricot fan, please give these a try. You'll be won over by the taste and texture.

 40 Dried Ulsulfured Apricots, cut in half with kitchen scissors Wild and Raw Sun-Dried Turkish Apricots are the best I've ever tasted
 7 Medjool Dates, Pitted and halved
 1 cup Shredded Coconut, unsweetened
 1 cup Walnuts, raw and unsalted
 Large pinch of Sea Salt
 2 tbsp Raw local honey
 1 tsp Pure Vanilla extract

Pulse the apricots and the dates in a food processor until they are roughly chopped. Add the rest of the ingredients and whir in your food processor until they form a cohesive mixture. Be careful not to over process or they will be sticky balls. You want to still be able to see small chucks of the ingredients in the balls. Squeeze the ingredients together gently and form them into balls. Place on wax or parchment paper in the fridge to firm up a bit. Enjoy!
