Autumn shines in this super delicious refreshing smoothie. Bee pollen is nutrient powerhouse, known to be one of the richest sources of vitamins. It also contains fatty acids, protein and all essential amino acids. It has also been shown to fight inflammation in our bodies. I remember back in my 20's taking bee pollen for energy, but I got alway from taking it. I was able to source local bee pollen and now I'm back to taking every other day in my smoothies. If you are allergic to apples as several of my friends are, substitute 2 large pears and berries of your choice, such as blueberries.

 2 apples, cored and roughly chopped
 1 large handful frozen blackberries
 1 ½ cups non dairy milk
 1 tsp bee pollen
 1 tbsp unflavoured collagen powder
 ½ lemon, juiced

Place all of the ingredients in a high powered blender and blend for at least 2 minutes or until smooth. Enjoy!
